Last Monday I made an excellent dish, my own version of Stuffed Zucchini! It is pretty healthy I would say and tastes absolutely delicious. So here is the recipe and I hope you all try it!
Ingredients:
1 lb ground turkey
2 tbsp sour cream
1/4 tsp salt
1/2 tsp cayenne pepper
1/2 tsp paprika
3 roma tomatoes
2 tsp thyme
4 zucchinis
1 onion
cheese (of your choice)
pepper
parsley
Directions:
Preheat your oven to 400 degrees. Give the zucchini a good scrub. Next slice the zucchini in half length-ways leaving the ends on. Spoon out the inside (leave about 1/2 inch in) until you end up with boat like shells. Now chop the zucchini pulp real well, an onion and 3 roma tomatoes. Sautee the ground turkey and onions in one tbsp oil or butter (I use butter). Add the cayenne pepper and paprika to it. When finished let it cool for a second and then add to a bowl. Then add 2 tsp dried thyme, 1/4 tsp salt, 2 heaping tbsp sour cream, pepper, the zucchini pulp, the tomatoes to the ground turkey mix. Lightly butter a baking dish and put the zucchini in (I use a glass pyrex casserole dish). Take a spoon and fill the zucchini with the mix. Sprinkle some cheese on top (you can use mozarella or sharp cheddar cheese, whatever your preference is) and fresh parsley.
Put them in a preheated oven, and cook for about 30 minutes (at 20 minutes I start to watch them closely to make sure they don't burn). When done, take them out and serve!
Note: You can also add more salt if you like. This recipe could also be done with ground beef, bacon, sausage or whatever...the skies the limit!
