Cafe Degas Lemon Icebox Pie

Over the weekend I decided I wanted to make a Summery and refreshing dessert so I made a Lemon Icebox Pie from my favorite French restaurant in New Orleans called Cafe Degas. They recently came out with a cookbook and I found the recipe online. I wanted to share will you all the recipe because it was absolutely wonderful and tasted exactly the same as if I ordered it at the restaurant. So without further adeu, here is the yummy recipe with a little change on the crust part. The picture below is an actual picture of a slice you get at Cafe Degas.




Lemon Icebox Pie {with a little change on the crust}
Yields 1 - 9.5 inch pie

Pie Crust

Ingredients
Graham Cracker Crumbs
Melted Butter
Sugar

Instructions
To make the crust I would just use the instructions on the box that the graham cracker crumbs came in because I tried to do what the recipe called for and it didn't turn out the way it said {it called for 1 pound graham cracker crumbs and 3 sticks butter, which maded a lot and too wet}. The recipe on the box {depending on what brand you go with, I used Honey Maid} calls for the crumbs, butter and sugar {or if you would like to do this the quick way you could just buy an already made graham cracker pie crust from your local grocery store}. If making the crust, mix together and press evenly into a 9.5 inch greased and floured glass pie dish or pie tin. Bake it at 350 degrees for about 10 minutes or until golden brown and let cool before pouring the pie filling in.

Pie Filling

Ingredients
6 egg yolks
Juice of 2 1/2 lemons
Zest of 2 1/2 lemons
Zest of 1 lime
1 1/4 cups bottled lemon juice
3 cups condensed milk

Instructions
While the pie crust is cooking, whisk together all 5 ingredients. Once the pie crust has cooled, pour in the pie filling. Cover and put in the freezer overnight. Serve frozen, topped with whip cream if you'd like.


And its as simple as that! This has got to be one of the easiest desserts I've ever made and the most yumiest. I love getting a slice of this pie everytime I eat at Cafe Degas and am now even more thrilled that I can make it at home! I really hope you try this and of course let me know what you think!
